Fresh Tamales from New Vendor - Ross Burtwell
When Ross Burtwell began his quest for the perfect tamale, his journey happened to end in the kitchen of his own Cabernet Grill - the restaurant he has owned and operated for the last ten years. Not content to stop with creating one of the best tamales we've ever tasted, he then set set out to put togehter a diverse line of mild to flaming fresh salsas to go with them. We think you'll agree, the results are amazing.
Chef Burtwell has been a frequent guest chef at the Market in the past, but this is the first year he will be joining us as a vendor. His tamales are sold warm for eating on site, but they are also packaged to take home for for handy freezing.
Different Varieties offered Weekly - This Thursday featuring Twin County Dorpers LambEach week Chef Burtwell plans to creat three different flavors of tamales, using combinations of fresh local ingredients. Last week we were thrilled with the Chicken and Padron peppers, the Chipotle Pork, and the Chicken and Cream Cheese varieties. This week he will partner with Twin County Dorpers to offer at least one tamale choice featuring grass-fed lamb. He also intends to offer three different fresh salsas for sale each week, depending on what ingredients are in season. Last week we enjoyed the mild red Gringo and medium green Windshield Wiper salsas, but weren't quite brave enough to try the red sauce labeled "XXX Lethal." Can't wait to see what Chef Burtwell cooks up this week!
