Chef Taylor Fraser at the Fredericksburg Herb Farm has put together a four course menu chock full of wild game; each course has been expertly paired with a wine by Becker’s winemaker, Jonathan Leahy. 

The Fredericksburg Herb Farm’s first ever wild game vintner dinner will be held on Thursday, December 13, 2012. The dinner bell will ring at 7pm, but guests are welcome to show up early to mingle and check out The Bistro Bar. Bar service will start at 6pm.

The meal will kick-start with an amuse bouche of slowly rendered then smoked duck breast with applewood smoked bacon foie gras mouse on a toasted pullman crostini. The second course, rabbit confit with a winter squash and beet salad, will be served with fresh swiss chard, a mixture of winter greens tossed in a meyer lemon vinaigrette and garnished with pepper crusted goat cheese wheels and savory beignets. A duo of pheasant and nilgai antelope will be served as the third course; the brined, breaded and fried breast of pheasant will be paired with roasted poblano cream sauce and the gunpowder rubbed grilled nilgai backstrap will be paired with an ancho demi-glace. This course will be served with a creamy herbal pumpkin polenta, roasted red beets, brussel sprouts and baby carrots. Sweetening the deal, Chef Fraser is preparing individual fresh baked apple pies topped with light whipped Roquefort topping and julienne of candied bacon for the final course.

The evening’s featured wine is a local favorite. Becker Vineyards is located in the Texas Hill Country on highway 290 between Fredericksburg and Stonewall. Representatives from Becker will be present during dinner to introduce and discuss the selection of wines that will be served. Wine pairings include Becker 2012 Provencal, 2012 Voignier, 2011 Prairie Rotie and 2012 Riesling. The four course dinner is $100 per person plus tax and gratuity and includes a wine pairing with each course. Dinner reservations are required.
