Roasted Winter Vegetables tossed with French Xeres Vinegar and Basil Olive oil,
Roasted Mini Peppers stuffed with Whipped Herbed Feta Cheese

This rich winter dish is best enjoyed in cold weather with a group of family or friends as it is impossible to make just a little bit of it. The satisfying flavors are complemented by the wines of the Southwest region of France and a nice thick crusty bread. As Julia Child memorably said: “Cassoulet, that best of bean feasts, is every day fare for a peasant but ambrosia for a gastronome”.
We think you will really enjoy this dish and unless you are non-meat eaters we suggest that you choose it! (Please let us know by Jan. 11th as we need to special order the meats).
